nanay narcisa & the pampano fish... while waiting for my husband to give me a ride after work yesterday, i decided to go with a pinay co-worker, alicia, whose house is just 3 mins away from the office. so i called my husband (who carpools with me every tuesday and thursday) and told him to just pick me up at alicia's house. it was my second time at alicia's house but my first time to meet her mother in-law, nanay narcisa who was in minnesota when i first visited. i was just so excited to personally meet her to thank her for all the filipino food she always sends through alicia. nanay narcisa was in the kitchen doing some "pampano" fishes when we arrived. i chose to kiss her than make "mano" and she was as excited as i was as she held a pair of scissors with her wet hands. as i watched her, i couldn't help but remember my mom who does "pampanos" and any other fishes the same way nanay narcisa does: they both cut fins, tails and ears and make a slanted cut on each side/s of the fish's body for the oil to penetrate. they also both blow softly each side/s of the fish's body so it won't stick in the frying pan. oh my, they are both superstitious! i went home full and with some cooked "mongo" and fried "pampanos" for lunch the next day. |

Greetings Virgo, Pampanos? My curiosity is piqued. Never had much fish in my home. The exceptions were when we went flyfishing up in the mountains. I love pan fried trout at a camp in the wilderness. It was simple, really. We didn't cut tails or heads off. The tail gave you something to hold onto, and the tail an anchor to keep the fish from falling apart in the pan. A little flour and pepper is all, cooked in butter or oil, over low heat. Then we'd peel the flesh off, with a fork, while holding the tail up. remains went into the fire. Mouths watering as I speak. hi, dave. please excuse me for my ignorance but i am not sure if "pampanos" (i am also not sure if i spelled it correctly) are of "asian origin" lol. a few people trim/cut tails and fins for presentation purposes only. and if you'll ask me how i like my fish, i like it fried---crisped and toasted--- most of the times. it's weird that sometimes i end up eating the tail because of it's crispiness.
